The 23rd & 24th Week

一連串的individual desserts
很忙碌的一月, 這個unit結束之後就是我們的wedding cake, 然後就考試, 畢業
六個月的時間, 現在回想起來真是好快

先來一天soufflé day

Fruit soufflé


很快就塌啦

Béchamel based soufflé

Chocolate soufflé

Pistachio soufflé pancake, sour cherry compote, vanilla-sour cherry swirl ice cream

Lemon soufflé pancakes, honey-lemon ice cream, honey lemon sauce, strawberry salad

然後chef忽然說另外一樣預定要做的甜點不做了
要宣佈mystery box, 每個人用那1 apple, hazelnut, 及Crème Fraîche做出一道甜點

我做的Hazelnut soufflé, candied hazelnut, apples and crème fraîche sauce

Fondant, vanilla raspberry swirl ice cream, trio of sauces

Warm hazelnut cake, flambéed bananas, vanilla salad, pink peppercorn ice cream

coconut chiboust, coconut financier, chocolate sauce, coconut sauce, chocolate sherbet

Raspberry and lemon chiboust tart, cranberry sorbet, lemon thyme sauce, crystallized thyme

Ligurian lemon cake, fig compote, pomegranate brandy syrup, honey almond gelato, hippen leaf

Beaumes de venise cake, mixed grape compote, fromage blanc sherbet

這個unit我們有個大project, 每個人都要想像自己開一間餐廳, any kind
設計一份甜點菜單, 寫出食譜及甜點擺盤
chef會根據菜單點兩樣, 每個人分配時間, 依照時間上菜
還蠻好玩的, 很像在參加top chef

Mochi Dumpling mango, orange, tropical coulis

這構想是來自雪莓娘, 麻藷, cream, 芒果, 蛋糕
chef一直說這是他吃過最好吃的mochi, 還叫我要教他怎麼做, 科科, 應該帶米去, 叫他用槌子捶麻藷 :P

Matcha Panna Cotta candied lotus nuts, azuki beans

用很典型的抹茶紅豆組合來做這樣, 這盤子裡有抹茶奶酪, 蜜紅豆, 蜜蓮子, 紅豆powder, 紅豆冰, 巧克力醬, 巧克力裝飾

    女兒一直要我做souffle 放了四天假 還是沒做 只做麵包啊 那個真的要快快吃 分秒必爭啊

    Tina: 呵呵做這個unit最討厭的部份就是, 每天回家都好漲, 因為每樣都要試吃看看, 遇到好吃的, 就會不小心吃太多… 很害人的一個unit呀!

    verano: 終於要熬成婆啦, 幸好我們的program只有六個月, 不過每天好像在打仗一下, 衝!

    yawen: 我看真的是我直接做給你吃比較快啦…

    Christina: 真的!! 不過我在家裡做每次都會多做, 剩下的就冰起來, 雖然塌下去很醜, 可是冰冰涼涼的吃也很好吃說!

    Yufei, congrats on graduating!!! I hope you went out and celebrating this big eveng! :0) That dessert with thyme sounds so interesting. Thyme is now one of my favorite herbs, I can’t believe that I spent pretty much all of my life without really tasting it! :0) Well, never too late!!

    evelina: Thank you!!! Thyme is really great, especially with chicken (well, for me :P ). I guess mixing “savory” things with the dessert is the trend right now. We’ll probably see more I think. Maybe next time, I’ll make some dessert with cumin. :P
